Abstract
From the past till now, bread is considered to be a main food for
human. The importance of bread due to the high calories and protein (74%:
89% successively) it contains. The food industry has passed through different
temporal developments till the automatic and half-automatic bakeries
appeared.
Since the local wheat production supplies 50% from the total need in
1995, sob read Important effect 0 n the economic and foreign policy. Thus,
study deals with the production of local wheat, bread industry, its problems
and solution. The study also aims at creating a balance between wheat
production. bread industry and thr growing over-population in Egypt; taking in
consideration a productive and consumed wheat region, as it's regarded as
the first in producing in 2000 (11.92% of the total production).
In 2000, the population rate in Dakahlia is 4.793 million persons (7%
of the total population). The manual bakeries reaches 426 bakeries in 2000
(4.9% of the total) . the province's provisional share of flour is 13.7 thousand
ton monthly on average 1.04 loaf daily for an individual and below the
average of the individual in 2000 by 1.96 loaf daily.
The study aims at demonstrating the economical capacity of manual
bakeries in the province and the melated effective factors depending on the
analytic and descriptive method to explain and deduce the results.
The related former researchers and studies refer to the increase of
wheat production as a result of the survey and productivity increase of
feddan. Moreover, the consumption wheat and its production increased as a
result of the increase aid dedicated to them. The national income, the

population number. wheat consumption and bread industry are effective
factors on consumption. The growth of bread loss percentage due to
decrease of its price, its aid increase. the bad and unclean manufacture and
careless usage of it.
The studies explain that workmanship wages is one of the most
elements of permanent costs. whereas production necessaries is one of the
most important variable costs elements. The manufacture is very important
bread generally, and the manual bread in particular. Thus, the customer's
needs are full filled in quantity, quality and with suitable price.
The study deals with wheat as it's the main source of bread industry
on the local and international level; thus, explain that the wheat planted
survey in the world is 214.58 million hectar in 2000. It also produced 572.41
million ton on the production average 2.67 ton/hectar.
The manual bread resembles 80% of all bread kinds and its
consumption increased mentally through the study period. Next, as a result
the individual consumption average increased mentally too, and its wheat
consumption average moves between 174 and 255 kg/year, the manual
bread price has raised from 10 malem in 1980 to 50 malem in 1996 according
to the permanent qualities. The number of working bakeries resembles 820/0
i.e. 8915 of them. Dakahlia has reached the eleventh position with 441
bakeries, resembles 4.015% of the total. It also has reached the tenth
position in the private sector with 438 bakeries and the sixth position in the
general sector bakery with three bakeries.
The local manual bakeries resembles with 75 bakeries; reached with
them the seventh position, while it reached the ninth position in relation to the
half-automatic bakeries with 351 bakeries and it has no automatic manual
bakeries. Where as the monthly flour share in Dakahlia resembles 13.65
thousand ton (3.32%) to reach the fifteenth, though it has the second level of
population numbers next to Cairo. where as the package daily share average
of the province reaches 4119.4 package. with almost daily productive
average 4177 thousand loaf that are produced in the province's bakeries,
Mansoura town reaches the first position with 64 bakeries, resembles 16% of
the province total, Tmo-Elamded reaches the last position with one bakery in
average. It's noticeable the individual consumption average increase of
manual bread during the study term.
The study illustrates the beginning economic signs of manual bread
industry in the province. that it's necessary to:
1- Put certain conditions to every one to set-up new bakery.
2-     Increase selling up the half-automatic manual bakeries that have high
abilities confirming on taking proceeds of its complete power.
3· Arrange bakeries working periods all the day in all places and regions to
make bread abundant all the time.
4-    Increase the control in bakeries and mills to guarantee the same
conditions of production.
5·    Re-distribute the monthly flour lots to the provinces according to
population number, its bakeries and its productive ability.
